National Pick Strawberries Day

Happy National Pick Strawberries Day to you! In our region, we typically begin harvesting the local juicy berries around Memorial Day. That is not the case this year, but this day is still a good time to talk about the versatile fruit. We can enjoy them fresh and plain, sliced and added to cereal or salads, made into jam or used in desserts. Over the years I have shared several strawberry recipes and today have combined three sweet treats highlighting this fruit.


A strawberry trifle is light, refreshing and easy to put together. I think this is a good one when you're entertaining in the hot summer months. 


Strawberry Trifle 
one angel food cake, cut into one inch cubes
instant vanilla pudding mix, 3.4 ounce box
2 cups milk
1 large tub Cool Whip
2 (plus) pounds fresh strawberries

Prepare the angel food cake according to box directions. Allow to cool and then cut into one inch cubes. Set aside. 
Wash fresh strawberries and set aside. When completely dry, slice berries.
Mix one box of instant pudding with 2 cups cold milk. Wisk for two minutes and then fold in one large tub (or two small) Cool Whip.
In a deep glass bowl (I inverted my glass cake plate to use the lid as my bowl and rested that in the inverted base), spread about a third of the pudding mixture in the bottom of the bowl. Sprinkle half of the angel food cubes over mixture. Layer half of the sliced strawberries on top. Repeat. Use remaining third of pudding mixture over top of trifle. I used three whole berries as garnishment on top.
Keep well chilled in refrigerator.


Notes: I was concerned that the angel food cake would get "soggy" if I assembled this way ahead of time. I put it together about 6 hours beforehand it was
 perfectly fine.
You could add blueberries and raspberries to the strawberries if you wish. 



The following two recipes use frozen, not fresh, strawberries so you would need to pick up a bag of them from the grocery. This cake is absolutely delicious! I made it for my husband's birthday a few years back. It is very moist and flavorful. 


Strawberry Cake
white cake mix (I used a strawberry cake mix)
1/2 cup oil
1/4 cup water
4 eggs
16 oz. bag frozen strawberries

Thaw strawberries overnight in the refrigerator and puree in the blender. Combine all ingredients in a bowl with mixer and pour batter into two round cake pans. Bake in 350 degree oven for 30-35 minutes, or until done. After it's completely cooled, frost it with Cool Whip and store in the refrigerator.

A friend gave me this bread recipe years ago after she had brought it to a luncheon and I have made it for gatherings since then. Strawberry break is moist and tasty without being overly sweet. It does freeze well. 

Strawberry Bread
3 c. flour
2 c. sugar
1 tsp. baking soda
1 tsp. salt
1 1/2 tsp. cinnamon
2 (10 ounce) packages frozen strawberries, thawed
1 1/4 c. cooking oil
1 1/4 c. pecans
4 eggs, well beaten

Sift together the flour, sugar, baking soda, salt and cinnamon in a large bowl and make a well in the center. Mix strawberries with oil, pecans and eggs; pour into well. Slowly and thoroughly mix with flour mixture. Put in two well-greased loaf pans or 6 mini loaf pans. Bake at 350 for about 1 hour or until bread springs back when touched in center.  (My baking time was less.)

Patriotic Lantern

It was time to take care of the spring floral display in my lantern and make something more seasonal-looking. 


With the door open, you can more clearly see the eagle statue I borrowed from my husband's office. I rested him on top of a glass to provide height and covered it with piece of patriotic fabric I had.


The color of the ribbon seems to be distorted from the direct light. Although a bit orangey-red looking, it really does match the red of the fabirc drape.

A Shared Treasure

Raise you hand if you have spent some of your quarantined time cleaning out closets. I jokingly say that I could open my own thrift store with the treasures I have set aside to donate when my favorite charitable organizations resume operation. My mother, too, has done some closets and found something she knew I would love. Look at this beautiful teacup and saucer. 


Look very closely toward the bottom of the flower stem and you will see double wedding rings. Notice the bells around the rim? This sweet set was, obviously, a wedding gift to my parents. My mother received it from one of her students. It seems worth adding, by the way, that she maintains contact with that student to this day! 


Knowing my fondness for tea cups and family pieces, my mother gave it to me! I'm proudly displaying it on our antique buffet. 


The buffet mirror is distracting in photos!
The framed piece is a free printable that I downloaded a few years ago. The sunshine caused a glare on the picture no matter where I stood to photograph.

Sparkle and Shine!

I have two products to share with you today and both produce a nice sparkle and shine finish! The first is Dawn's Platinum Powerwash Spray. I picked up a bottle for my mother and one for me a few months ago after my sister-in-law highly recommended this dish spray. Simply squirt your pans when you're doing your dishes and it begins its magic-like cleaning. I would agree with its claims to have five times the grease cleaning power compared to regular Dawn. We are hooked on this product and will definitely repurchase it.


I think this is the best jewelry cleaning cloth! 

I have used many different brands over the years and this one is the best in making my gold and silver necklaces, bracelets and earrings sparkle and shine. Sunshine Polishing Cloths can be purchased online from different sources and prices are not uniform, so you have to compare. I think I got five of them for under $20 with free shipping. They claim to also be great for mirrors, but I have not used them for cleaning anything except jewelry. They are not washable, so must be disposed when soiled. They do an excellent job!

Tuesday Tablescape

Happy National Teacher Day! This year our educators spent their day of recognition very differently from usual. Although physically separated from their students, I know they still maintain that bond with them. Fourth quarter's virtual instruction is nothing like the first three quarters of the academic year. I had the blessing of spending 30 years in a first grade classroom and I can only imagine what a big adjustment this has been for students, parents and teachers. Today's table is in honor of all involved.



My aunt gave me a set of four apple placemats. 
A friend recently sent me a gorgeous bouquet. These lilies were a part of it and they smell divine. 

I grabbed the marble apple and teacher mug from my den.

Enchiladas

I thought this encore recipe might be timely in case you're looking for a Cinco de Mayo dish. I know tomorrow is the 5th, but any day is suitable for these tasty enchiladas.
These were just ready to slide into the oven.





Enchiladas

1 pound ground round

1/2 cup cottage cheese

1/2 cup sour cream

1 cup shredded cheddar (we like sharp cheddar)

1/2 cup shredded cheddar (for topping)

I can mild enchilada sauce
1 small can tomato sauce

10 flour tortillas

salt and pepper to taste



Brown and drain ground round. Mix beef, cottage cheese, sour cream, cheddar cheese and if desired, salt. Spread  some of the enchilada sauce in an 8 by 10 pan that has been lightly sprayed. Put 1 spoonful of enchilada sauce and 2 heaping spoonsful of the meat mixture on a tortilla. Roll and place in the dish. Mix remaining enchilada sauce with the tomato sauce and pour over the top of the tortillas. Sprinkle with remaining 1/2 cup cheese and ground black pepper (to taste). Bake at 375 degrees for about 20 minutes until it's hot and bubbly.
