As I have mentioned before, we're big salad fans. This is an oldie, but goodie. I think there are numerous variations of it, but it's the same basic idea.
Broccoli Salad
4-5 cups fresh broccoli florets, chopped into small pieces
1/2 cups raisins or dried cranberries (I used Craisins)
1/2 cup crumbled bacon
1/2 cup salted sunflower seeds
1/2 cup sharp cheddar cheese (chopped into small cubes)
Dressing:
1/2 cup mayonnaise
scant 1/4 cup sour cream
1-2 Tablespoons sugar
2 Tablespoons apple cider vinegar
salt and pepper to taste
Combine all salad ingredients. Whisk together dressing and pour over fresh ingredients. Stir to combine, cover and refrigerate. It's best to prepare it several hours in advance of serving it. This will yield about 4 servings.
