Cowboy Soup


Technically, it's soup weather. It just doesn't feel like it since it was a record-breaking 85 degrees here yesterday. This flavorful crockpot recipe came from a church cookbook and has a hearty, stew-like consistency.






Cowboy Soup
1 pound ground round, cooked and drained
1 large onion, finely chopped
1 can Rotel tomatoes
2 cans diced tomatoes
1 box Spanish rice, prepared per directions
1 can cream-style corn
1 can mixed vegetables
1 T. taco seasoning
Sauté beef and onion and drain.  Add all other ingredients to meat and onions in large crockpot or stew pan and simmer for at least four hours.
