Pumpkin Cake

Do you whip-up those cakes that are made from just a boxed mix and a can of pie filling? What's easier than just two ingredients? For example, you can fold lemon pie filling into a dry angel food cake mix for a delicious treat. Here is another example you may want to try.
In a large bowl, just combine the cake mix (just dry; you do not follow package directions), pumpkin and a bag of cinnamon chips. You can make a cake, cupcakes or even bread.

Bake it in a prepared pan in a 350 degree oven. Test for doneness with a toothpick inserted near the center. My breads took about 30 minutes. I lightly dusted them with powdered sugar at serving time.


I was recently  preparing a few different kinds of treats for our Sunday school class and this was one of my offerings. It is exceptionally moist and the cinnamon chips give it a good flavor without being overly sweet tasting.

A small slice would go perfectly with hot tea on a cold day! What combinations have you tried with two ingredient cakes?
