Eggs Florentine

The recipe I am sharing this week was given to me by a friend and I thought maybe you'd be interested in trying it. We really enjoy it.

Eggs Florentine
6 eggs
12 ounces cottage cheese
8 T melted butter
8 ounces softened cream cheese
8 ounces sour cream
2 T flour
1/8 tsp. pepper
2 cups shredded sharp or Colby cheese
3 cups fresh spinach, stems removed and snipped into small pieces


Mix eggs, cottage cheese, butter, cream cheese, sour cream, flour and pepper. Fold in cheese and spinach and pour into a greased 9 by 13 pan. Bake in a 350 degree oven for about 40 minutes, until a knife inserted in the center comes out clean.
