Baked Curried Fruit

Don't be hesitant to try this because of the use of curry. It's not hot, but is flavorful and goes perfectly with brunch---or any meal, actually. Using canned fruits, it goes together quickly and is simple to prepare.

Baked Curried Fruit
1(15 oz.) can apricots, drained
1 (15 oz.) can mandarin oranges, drained
1 (20 oz.) can pineapple chunks, drained
1 (15 oz.) can peaches, drained
1 (29 oz.) can pears, drained
1 small jar maraschino cherries, drained
6 T. butter
1/2 cup brown sugar, packed
  1 T. curry powder

Combine drained fruit in a glass dish which has been sprayed. In a saucepan on the stove, melt butter and add 1/2 cup brown sugar and 1 curry powder. Pour over fruit and gently mix. Bake in a 350 degree oven for 45 minutes, or until warmed through.

Enjoy your day!
