Pork Loin

I know I have shared a few different pork recipes. This is for a pork loin, though, and is quite good! It originally came from my parents' church and is often used there for gatherings.

Pork Loin
pork loin (approx. 2 1/2 pounds)

1 T. celery salt
1 T. paprika
1 T. pepper
1 1/2 teaspoons salt (we use sea salt)
3 T. olive oil

Combine celery salt, paprika, salt and pepper in bowl. Rinse pork loin and then rub in all of the of the dry mixture. Roll the meat in olive oil. Place in a shallow baking pan and cook 2 hours in a 350 degree oven. Check internal temperature and if it hasn't quite reached 165 degrees, loosely cover with foil and return to the oven.

Bon Appetit!
