Strawberry Cake

A few weeks ago was my husband's birthday and since he loves strawberry desserts, I knew I wanted to try this recipe for his special day. I don't even remember where I first read it as it was several months ago. I just copied it and stuck it on the July page of my calendar so I would have it handy. It was a big hit so I am sharing it with you.

Strawberry Cake
white cake mix (I used a strawberry cake mix)
1/2 cup oil
1/4 cup water
4 eggs
16 oz. bag frozen strawberries

Thaw strawberries overnight in the refrigerator and puree in the blender. Combine all ingredients in a bowl with mixer and pour batter into two round cake pans. Bake in 350 degree oven for 30-35 minutes, or until done. After it's completely cooled, frost it with Cool Whip and store in the refrigerator.



I think you'd enjoy this highly moist and flavorful cake. It's a "berry" refreshing dessert!
