Do you ever sort of forget about a recipe only to rediscover it after a long time? That's exactly what happened with this taco pie. My cousin shared the recipe years ago when I was collecting family favorites for a cookbook I compiled for my sister's wedding shower. Although I have prepared this entrée over the years, the recipe has sat for quite some time...for no particular reason! I happened to think of it recently so made it for dinner one day last week. It's simple to put together! Serve with lots of lettuce and salsa for plenty of vegetables and then add a side of fruit salad and you have your meal.
Taco Pie
1 tube crescent rolls
1 pound ground beef
1 package taco seasoning mix
1 bag of nacho tortilla chips, crushed
1 cup sour cream
1 cup shredded cheddar
Brown meat and add taco seasoning as specified on the package. Simmer for 5 minutes. Line pie pan with crescent roll dough, pressing together seams. Layer half of the crushed chips on the unbaked crust. Add the prepared meat and spread evenly. Spread sour cream on top of the meat and then the shredded cheese. Add remaining crushed chips on top. Bake at 400 degrees for about 20 minutes. Top with shredded lettuce and salsa when serving.
